White Chocolate Macadamia Nut Scones


My husband loves white chocolate macadamia nut cookies. And like me, he loves a delicious baked good in the morning (cause who doesn't love an excuse to have sweets before 0900!). So I married the two ideas together and created these white chocolate macadamia nut scones. They are easy to throw together and involve very little mess because you use a scoop (or large spoon) to put them directly on the baking sheet; no rolling and cutting required! So grab your coffee or tea, slow down and enjoy these scrumptious scones!

White Chocolate Macadamia Nut Scones Yield: 16 scones Scone Batter 2 cups all-purpose flour ½ cup granulated sugar 1 teaspoon baking powder ¾ teaspoon salt 4 Tablespoons butter, cold 4 ounces cream cheese, softened 6 ounces white chocolate chips 4 ounces unsalted macadamia nut pieces 1 egg, lightly beaten ½ cup milk 1 teaspoon vanilla

Ganache 4 ounces Baker’s white chocolate 4 ounces heavy cream

1. Preheat the oven to 350 degrees Fahrenheit. Prepare two cookie sheets with either parchment paper or Silpat mats. Set aside. 2. In a large bowl mix together flour, sugar, baking powder, and salt. 3. Cut butter into the flour until the butter is about the size of a small pea. Then cut in the cream cheese. Work quickly so your hands don’t warm up the butter and cream cheese too much. 4. Mix in the white chocolate chips and the macadamia nut pieces with a rubber spatula. 5. In a separate bowl mix together the egg, milk, and vanilla. 6. Add these wet ingredients to the flour mixture. Carefully mix to incorporate all the liquid. 7. Using an ice cream scoop that is about ¼ cup size, scoop out 16 scones and place them a few inches apart on the prepared baking sheets. 8. Bake in preheated oven for 19 minutes or until the scone is baked through. 9. While the scones cool, gently melt together in the microwave the white chocolate and heavy cream.
