Spiced Apple Cake Yield: 1 bundt cake/8 slices 1 3/4 cup all-purpose flour 2 teaspoons ground cinnamon 1/4 teaspoon ground nutmeg 1/8 teaspoon ground all-spice 2 teaspoons baking powder 1/2 teaspoon salt 2 small apples, peeled and small diced 1/2 cup butter, softened 3/4 cup brown sugar 3/4 cup granulated sugar 3/4 teaspoon vanilla extract 2 eggs 1/2 cup milk 3/4 cup apple juice Powdered sugar, for garnish 1. Preheat the oven to 350 degrees Fahrenheit. Prep a bundt cake pan with non-stick baker's spray. Set aside. 2. In a bowl whisk together the flour, cinnamon, nutmeg. all-spice, baking powder and salt. Stir in the diced apple. Set aside. 3. In a separate large bowl with a rubber spatula, mix together butter and sugars together until smooth. 4. To the butter mixture add the vanilla and eggs and mix until smooth. 5. Add half of the flour mixture to the wet ingredients and gently stir. Before it is completely incorporated slowly stir in the milk and apple juice. Once smooth add in the remainder of the flour mixture. Mix until smooth. 6. Pour into prepared bundt pan and place in oven for 45 to 55 minutes or until a toothpick comes out clean. 7. Allow cake to cool for 30 minutes prior to flipping out and allowing it to cool more. 8. Dust with powdered sugar and serve warm or at room temperature. *Store in the fridge and warm as needed.
