Pie Meets Brownie


I'm a big fan of pie. My husband is a big fan of brownies. And so brownie pie is a winner in our house! For Thanksgiving I made the traditional pumpkin pie and pecan pie but I wanted to try something different. I had heard of brownie pie but had never made one before. So instead of doing the logical thing and finding a tried and true recipe, I made one up! And thank goodness it worked out. It not only worked out. It.was.AMAZING! Caramel Brownie Pie Yield: 8 slices

1 recipe pie dough (you can use store bought or homemade) 1 cup homemade caramel (caramel recipe below) ¾ cup all-purpose flour ¼ teaspoon salt 1/3 cup cocoa powder 2 eggs 1 egg yolk 1/8 cup whole milk ¾ cup granulated sugar 1/3 cup brown sugar 2/3 cup butter, melted & slightly cooled 3/4 teaspoon vanilla extract 2 ½ ounces unsweetened baking chocolate, melted and slightly cooled 1. Preheat the oven to 350 degrees Fahrenheit.

2. Roll out the pie dough and place it in a 9" pie tin or tart pan. Create fun edges if you’d like. Set in fridge until ready to use. 3. In a small bowl whisk together flour, salt and cocoa powder. Set aside. 4. In a larger bowl whisk together the eggs, yolk, and sugars. Then gently mix in the butter, vanilla and baking chocolate. 5. Stir the dry ingredients into the wet ingredients. Mix until incorporated. 6. Remove crust from fridge and fill with batter. Top with homemade caramel and gently (and only slightly) swirl it in. You don’t want to completely mix the caramel into the batter, some should be on top still, but you do want to make sure it reaches the sides and down to the bottom in some places. 7. Place in oven for 35 to 45 minutes or until the top is crackled in appearance, the batter is set and a toothpick comes out mostly clean. 8. Cool and enjoy!

Homemade Caramel Sauce

1 cup sugar 1 Tablespoon corn syrup ¼ cup water 1/2 cup heavy cream, warmed 3 Tablespoons butter 1/4 teaspoon salt 1 teaspoons vanilla extract 1. In a large sauce pan, lightly mix the granulated sugar, corn syrup and water until the sugar is dissolved and all ingredients are combined. 2. Place the pan over medium heat. Do not stir. 3. Watching closely, allow the mixture to begin to bubble and caramelize. If you notice the center becoming darker than the outer ring, gently swirl the pan – DO NOT STIR. Cook until it reaches a medium-dark amber color. Remove from heat. 4. Immediately and slowly add in cream, mixing until combined and then add the butter and salt. Stir until well incorporated. 5. Allow caramel to cool slightly before adding in the vanilla extract. Allow to cool completely.
