Kid-Friendly Protein Pancakes

Our son is constantly eating. Can you relate? We are pretty blessed that he eats his veggies without a fight, but getting good protein in him can be a challenge. Sure he'll eat chicken or a hard-boiled egg, but not consistently, so we've started to supplement his diet with KidzShake. Typically we give him a scoop of chocolate KidzShake in some milk and he loves it because it's literally chocolate milk. However last weekend we branched out and made a breakfast out of it -Chocolate Protein Pancakes. He couldn't get enough and that was fine by me!

Chocolate Protein Pancakes Yield: 10 pancakes 3/4 cup whole wheat flour 6 scoops Chocolate KidzShake Protein Powder 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 cup milk 1 teaspoon vanilla extract 1 teaspoon vegetable oil 1 egg, lightly beaten 1/2 cup semi-sweet chocolate chip 1. In a bowl mix together flour, protein powder, baking powder, baking soda and salt. Set aside. 2. In a large bowl mix together milk, vanilla, oil and egg. 3. Gently whisk dry ingredients into the wet ingredients, followed by the chocolate chips. 4. Stir until just smooth. Don't over mix. 5. Place a large pan onto medium-low heat and grease with non-stick spray or butter. Scoop out 1/4 cup batter and pour onto pan. Cook until the top is bubbly and the bottom releases from the pan. Be careful not to cook for too long and burn them!
