The Keto diet is pretty popular these days. If you don't know much about it, its a low-carb, high-fat diet. And while I don't follow that kind of lifestyle, I do have followers who do. And seeing as one of my new year's resolutions was to try to cook and bake items that are completely new to me, this challenge - of creating a keto-friendly brownie - fit the bill! I started with my classic brownie recipe from my cookbook, To Deliciousness and Beyond. I reworked it to create a keto-friendly version of this delectable treat. Traditional all-purpose flour was removed and a mix of almond flour and coconut flour were added. The abundance of brown and white sugars were replaced with Truvia. I also switched out milk for heavy cream and almond milk.
The key to converting recipes is knowing what each ingredient does in a recipe. What is your "binder." What gives it structure? What consistency should the batter be before baking. Baking is a science and there is a delicate balance of ingredients. If you're looking to convert recipes, I highly recommend learning about traditional baking first so you can understand how to swap out ingredients. I recommend Alton Brown's I'm Just Here for More Food. It is a fantastic, in-depth book about baking and the science behind it.
Keto-Friendly Almond Crunch Brownies Makes: 12 brownies
¾ cup almond flour ¾ cup coconut flour ½ cup cocoa powder ½ teaspoon salt ½ cup Truvia 14 Tablespoons (1 stick + 6 Tablespoons) butter, melted ½ cup heavy cream 5 ounces dark chocolate chips 3 eggs, lightly beaten 2 egg yolks, lightly beaten ¾ cup unsweetened almond milk 1/3 cup sliced almonds
1. Preheat your oven to 350 degrees Fahrenheit. Prepare a 9” x 13” baking pan by greasing the pan with butter. Set aside. 2. In a large bowl whisk together the flours, cocoa powder, salt and Truvia. Set aside. 3. In a small, microwave-safe bowl combine heavy cream and chocolate chips. Microwave for 15 – 30 seconds. Stir until combined. If the chocolate isn’t completely melted try adding it back to the microwave for another 10 seconds. Set aside. 4. To the dry ingredients stir in the butter, chocolate cream, eggs and almond milk. Stir until combined. 5. Pour batter into the prepared pan and smooth out the batter to create an even layer. 6. Sprinkle sliced almonds on the top of the batter. 7. Bake for 30 minutes.
