Date & Chocolate Energy Bars

If you're looking for a quick burst of energy and a little sweetness in the middle of your day, pop one of these! They are ridiculously easy to make and can last in your fridge for many days. To tell you how good they are.... our son, who has recently become picky, loves them and asks for them! So what is giving you the energy? Well, to start with, you have dates which are naturally sweet. That's why, other than the chocolate chips, there's no added sweeteners in this recipe. You also have the power from both almond flour and peanut butter to provide much needed protein. Finally you have oats. These healthy carbs are great for filling you up and keeping you going! If you are looking to leave out the oats (for Keto diet purposes) you can add extra almond flour and some coconut flour! Let this recipe be a starting off point for you. I've tried making many other energy balls but never found one I liked. Some have the addition of seeds (like chia or flax) but I didn't enjoy the flavor or mouth texture those provided. But maybe that is something you enjoy. So play with this recipe. Switch out peanut butter for almond butter or sunbutter if you can't have peanuts. Try coconut flour instead of almond flour for a hint of the tropics. Skip the chocolate chips all together if you must (but they are a nice guilty pleasure if you ask me). Date and Chocolate Energy Bars Make: 17 9 ounces fresh dates 1/2 cup peanut butter

1 1/2 teaspoons vanilla extract 1/2 cup almond flour 1/2 cup oats 1/2 cup mini chocolate chips 1. Place dates in a food processor and plus until they are well chopped up but not pureed. If your dates don't chop well because they are super sticky or thick, add a tablespoon or two of water to loosen it up as you pulse your food processor. Set aside. 2. In a bowl mix peanut butter and vanilla together. 3. Next mix in the chopped dates. 4. Finally mix in the flour, oats and chocolate chips. 5. Cover the bowl and place it in the fridge for 30 minutes to make it easier to make them into balls. 6. Scoop 1 - 1 1/2 Tablespoons and roll into a ball. 7.
