Chicken Caprese Flatbread

Does anyone else here enjoy ordering appetizers as a meal? I do! But they have to be the right appetizer. Though I'd like to think of mozzarella sticks as a meal, they really lack a lot of things that will fill you up and keep you full. This recipe was inspired by an appetizer I had last month that I wanted to make into a meal. So I plus'd it with chicken and other ingredients to fill you up! And can we talk about how simple this recipe is? There's very little prep when you use a rotisserie chicken and canned tomatoes, which means lunch or dinner is ready in a snap!

Chicken Caprese Flatbread Yield: 1 large flatbread

1 garlic naan bread 1/3 cup diced fire-roasted tomatoes 1/2 cup fresh mozzarella cheese, sliced 4-5 ounces rotisserie chicken, sliced and warmed Kosher salt, to taste 1/2 cup lightly packed arugula 1 avocado, sliced Balsamic vinegar, to taste Olive oil, to taste

1. Heat a large cast-iron skillet over low heat. 2. Spray the bottom of the pan with vegetable oil. Place naan bread flat side up (rounded side down). Allow the "top" of the bread to warm a bit before flipping bread over so the flat side is on the bottom. 3. Evenly top bread with tomatoes, cheese, and chicken. Season with salt to taste. Cover the pan with a lid and turn up the heat to medium. 4. Allow the bottom to crisp up and the cheese to begin to melt. 5. Remove from pan and top with arugula and avocado. 6.
