Caramel Walnut Brownies

Anyone else struggle to get a good night's sleep?! I've struggled for years! Like a lot of people, I tend to lay in bed thinking about all the stresses of the day (or coming days) and I'm always thinking about my "to do" list for the upcoming day or week. And then just like that, hours have passed and I can't get to sleep. I felt like I had tried everything. I exercise 5-days a week. I don't have too much caffeine. I read before bed so I'm not staring at a screen. I even tried white noise. Nothing helped. I wasn't interested in sleeping pills but I was getting to the point where I needed some real help with my sleep. I was always tired during the day and that affected me in so many negative ways. So once I saw others getting results from CBD oil I knew I wanted to try it as well. Recently, I was introduced to Green Plant, a wellness company producing high-quality hemp-based CBD products (shout out to my cousin over at Kathryn Korff Designs who showed me the amazing benefits of Green Plant's products). After contacting the company to order a bottle they reached out and asked if I'd be willing to write a recipe that included their CBD oil. I was absolutely elated to start this partnership and took on the task of creating a delicious recipe that incorporated their product. When you're working with CBD oil there are a few things you'll need to consider and be aware of. 1. CBD oil can't be heated up too hot for too long. This oil can absolutely be added to hot tea and coffee. You'll actually find that the oil is more effective when warmed. However when it comes to baking, you don't want the oil to be heated to it's boiling point (which is roughly 320+ degrees). Why? Because as the oil is heated to those temperatures it will start losing it's potency. No one wants that!

2. What you mix the oil into does matter. CBD oil will dissolve and incorporate more thoroughly when added to items such as oils (vegetable, canola, etc) or butter. 3. Dosage is key. Just like a medication you get from the pharmacy, your dosage of CBD oil is an important element to consider. Every person is different and therefore how much CBD oil you add to a recipe may not fit everyone. It's always best to start small and work your way up. Green Plant's dropper holds 1ml worth of CBD oil which is 16.66 mg. Personally I take about 7mg per night however some take far more. Now, without further ado, please enjoy this Caramel Walnut Brownie Recipe!

Caramel Walnut Brownies - Infused with Green Plant's CBD Oil Yield: 12 Brownies Brownies 1 1/2 cups all-purpose flour 1/2 teaspoon granulated salt 3/4 cup Hershey's Special Dark Chocolate cocoa powder 3 eggs 2 egg yolks 1 1/2 cups granulated sugar 3/4 cup brown sugar 1/4 cup milk 1 1/3 cups butter, melted and slightly cooled 1 1/2 teaspoon vanilla extract 4 ounces semi-sweet baking chocolate, melted 8 ounces walnut pieces, plus more for garnish, toasted Caramel Sauce 1 cup granulated sugar 1/2 cup water 1 Tablespoon corn syrup 1/2 cup heavy cream, warmed 3 Tablespoons butter 1/2 teaspoon vanilla extract Dash of finely crushed sea salt Green Plant's CBD oil, amount varies per person 1. Preheat the oven to 350 degrees Fahrenheit. Prepare a 9" x 13" baking pan with non-stick baking spray. Set aside. 2. In a medium-sized bowl whisk together flour, salt, and cocoa powder. Set aside. 3. In a large bowl, gently whisk together eggs, yolks, and sugars. To this bowl, add the milk, butter, vanilla, and melted chocolate. Whisk together to combine. 4. Using a rubber spatula, stir dry ingredient and toasted walnut pieces into the wet ingredients. Mix only until all the flour is incorporated. 5. Pour batter into prepared baking pan. Evenly spread the batter in the pan. 6. Place in the oven for 32 - 36 minutes, or until a toothpick comes out clean. 7. While brownies are baking, make the caramel sauce: In a large, clean sauce pan, over medium heat, gently mix together the sugar, water, and corn syrup until the sugar is completely incorporated and there is no sugar sitting on the bottom of the pan. Then stop stirring! Make sure not to splatter any of this mixture onto the sides of the saucepan, this can cause the sugar to crystallize instead of caramelize. (If you get anything on the sides, use a wet pastry brush to wash it off.) 8. As the sugar caramelizes you may notice the center of the pan getting darker than the outer ring. Gently swirl the pan to carefully even out the color, don't stir it. Once the sugar is a medium amber color, remove from heat immediately. Slowly whisk in the heavy cream until it's incorporated. Then stir in the butter. Allow the mixture to cool for about 10 minutes before adding the vanilla (adding it too soon can burn off the wonderful taste of the vanilla). Add a dash of finely crushed sea salt with the vanilla. Stir the caramel sauce occasionally to cool it evenly. 10. While the caramel sauce is warm, but not hot, you'll add the CBD oil. Here is where your dosage of CBD oil is going to come in. This caramel recipe makes roughly 1 cup of sauce. Divided among the 12 brownies it will be about 1 1/4 Tablespoons of sauce per brownie. If you are looking to personalize each brownie to a specific dosage (or make some with CBD oil and some without) simply measure out 1 1/4 Tablespoons of sauce and add your desired number of drops to the caramel, mix and pour over a single brownie. (This is what I did!). If you are looking to add CBD oil to the entire batch of caramel you'll want to take your desired dosage and multiply it by 12, add that to the cup of caramel, mix, and pour over the brownies. 11. Top the caramel brownies with more walnuts as garnish, if desired. 12. Enjoy! STORAGE: The caramel sauce needs to be refrigerated if not eaten soon after making. If you don't plan to pour the caramel sauce over the entire batch of brownies immediately, you can refrigerate the sauce and keep the brownies covered at room temperature. When you're ready to use the sauce, gently warm up the caramel sauce to make it spreadable over the brownies. Make sure if there's CBD oil in it, you don't over heat it!
