Happy September everyone! Can't believe we are saying goodbye to Summer and we're getting closer to the official start to Fall. Though I love Summer more than anything, I am excited for all the festivities that Fall brings. It's been busy here. Though we're mainly settled in our new house, there's still so much exploring to do that I still feel very new to the area. We've been taking regular trips into DC to see museums and gardens. We've been signing up for cultural events and activities more locally. And we've been filling up the calendar with all sorts of things. With everything going on, I'm a little burnt out from cooking big fancy meals. So I'm sticking with easier recipes that involve less work, less dishes and more leftovers. This recipe for Buffalo Chicken Burgers started in our hotel room when we first moved to the area. It was a quick and easy recipe I could whip up in the mini kitchen of the hotel. And I believe I deserve bonus points for the fact that my kid loved it too!
Buffalo Chicken Burgers Makes: 5
1 ¼ pounds ground chicken 3 Tablespoons panko bread crumbs 3 Tablespoons hot sauce 2 Tablespoons butter, melted ¼ teaspoon salt ¼ teaspoon pepper ¼ teaspoon garlic powder 1 egg 5 hamburger buns 2 avocados, sliced 5 Tablespoons Ranch dressing Green Onions, sliced, for garnish
1. In a bowl, mix together chicken, bread crumbs, hot sauce, butter, salt, pepper, garlic powder, and an egg. Mix until well combined. Divide into 5 equal portions and create the shape of a burger patty. 2. In a skillet sprayed with non-stick cooking spray, over medium high heat, cook the burgers until they are no longer pink in the middle. Timing will depend on how thin you have chosen to make each patty. 3. While the burgers are cooking. Toast the burger buns. Place one burger on each bottom bun.
